With the ability to send goods throughout the world in a matter of hours, we live in a time when it is possible to get what we want, when we want it. It does not matter what time of year it is, with very few exceptions any produce required by the caterer can be sourced and supplied. This is not always a good thing, as a chef you need to get the get the best quality and stay in budget. We tend to ignore homgrown produce and miss out on the seasonal selection which is often the best in terms of flavour and value. It is always difficult to sort out what is in season at any given time, for up to date information contact our sales team who will be happy to help.
Now is the time to buy your Seville Oranges, they are only available for a few weeks each year, but you can freeze them to extend the season. Seville’s have an intense sour tasting juice which is great when used for sauces, marinades and vinaigrettes, the skin can be candid and also used to flavour cake puddings and sauces.
Rhubarb from Yorkshire is now available, grown indoors its tender and succulent and really versatile, use in conserves, desserts, pastries and jams the list goes on and on.
Blood Oranges are seasonal and the short season is over before you know it has begun. It is classed as a mutant fruit with an amazing deep red colour and a sharp tart taste, they are fantastic juicers, mix with yoghurt,
or substitute with ordinary oranges and add to your cocktails just wonderful.
